Ingredients

1 lb fresh spinach
1 1/2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups chopped onions

1 cup chopped scallion
1 cup crumbled feta ( about 4 ounces )
1/4 cup freshly grated parmesan cheese
1/4 cup finely chopped dill
1/3 cup finely chopped flat leaf parsley
1 large egg
1 large egg yolk
salt & freshly ground black pepper
1/4 cup pine nuts
12 sheets phyllo pastry
6 tablespoons unsalted butter , melted

Instructions

1.Preheat your oven to 375°F.
2.In a large sauté pan, heat up olive oil and 2 tablespoons of unsalted butter over medium heat.

4.Add the spinach, salt, and freshly ground black pepper to the pan and cook until the spinach wilts completely.

7.Add the spinach mixture to the cheese mixture and stir to combine.
8.On a clean, dry surface, lay out a sheet of phyllo pastry and brush it with melted butter.
9.Lay a second sheet of phyllo pastry on top and brush it with melted butter.
10.Repeat this process with 4 more sheets of phyllo pastry.
11.Cut the layered phyllo pastry into 6 equal strips.
12.Spoon the spinach and cheese mixture onto the bottom edge of each strip.
13.Fold the pastry over the filling to form a triangle.
14.Continue folding the pastry in a triangle shape until you reach the end of the strip.
15.Brush each triangle with melted butter and sprinkle pine nuts on top.
16.Repeat this process with the remaining 6 sheets of phyllo pastry and filling.
17.Bake the spanakopetes in the oven for 20-25 minutes, or until golden brown and crispy.
18.Serve hot and enjoy!
