Ingredients

1 lb dried white bean , soaked overnight
1 large yellow onion , peeled & roughly chopped
3 carrots , peeled & sliced
3 stalks celery , strings removed & sliced
1 red ripe tomatoes , peeled seeded & roughly chopped or can peeled tomatoes
2 tablespoons tomato paste
5 tablespoons olive oil
2 bay leaves
1 handful fresh flat-leaf parsley
salt , to taste
fresh ground black pepper , to taste

Instructions

1.Rinse soaked beans, place in a large pot and add enough water to cover.
2.Add onion, carrots, celery and tomatoes to the pot along with olive oil, tomato paste, bay leaves, and parsley.
3.Bring the pot to a boil, then reduce heat to a low simmer.
4.Cover and let simmer for 1-2 hours, stirring occasionally, until beans are tender.
5.Remove bay leaves and parsley and season with salt and pepper to taste.
