Ingredients

1 kg beef , minced ( or 700 g beef and 300 g pork )
2 eggs ( preferably organic )
2 medium tomatoes , peeled , seeded and grated
1 large onion , grated
1/2 teaspoon oregano , dried
1/2 teaspoon thyme , dried
1 cup fresh parsley or 1 cup of fresh mint , chopped
1/4 cup olive oil
salt
pepper , freshly ground

Instructions

1.Preheat your oven to 200C.
2.In a large mixing bowl, combine the minced beef or beef and pork, eggs, grated tomatoes, grated onion, dried oregano, dried thyme, and chopped parsley or mint. Mix until well combined.
3.Add salt and freshly ground black pepper to taste.
4.Using your hands, shape the mixture into large patties that are about 3/4 inch thick.
5.Heat the olive oil in a large non-stick skillet over medium heat.
6.Add the patties, and cook for 3-4 minutes on each side, or until nicely browned.
7.Transfer the patties to a baking sheet, and place them in the oven.
8.Bake for 10-15 minutes or until the patties are cooked through.
