Ingredients

1 package phyllo dough ( often have 2 rolls in them , you 'll only need one if this is the case )
16 ounces frozen spinach , defrosted , strained and squeezed to remove excess
liquid
12 ounces feta cheese
6 6 ounces romano cheese , and ( see directions ) or 6 ounces parmesan cheese ( see directions )
1 -3 egg ( see directions )
1 bunch green onion
1 -6 minced garlic clove ( depends on garlic love )
1 -2 tablespoon basil
1 -2 tablespoon oregano
1 -2 1/2 cup fresh cilantro or 1/2 cup Italian parsley
3 tablespoons olive oil
1/4 cup butter , melted
Spanikopita is a traditional Greek dish made with phyllo pastry, spinach, and feta cheese. Instructions

1.Preheat oven to 375°F.
2.In a large mixing bowl, crumble the feta and romano or parmesan cheese. Add the defrosted and strained spinach, green onion, garlic, basil, oregano, cilantro or parsley, and olive oil. Mix all ingredients together well.
3.Melt the butter. Unfold the phyllo dough and lay it flat. Cut the phyllo lengthwise into two equal halves. Take a strip of phyllo and lay it on a flat work surface and lightly brush it with melted butter. Spoon a heaping tablespoon of spinach mixture onto the bottom edge then fold the diagonal corner over the filling to form a triangle. Continue folding the phyllo over the filling to form a triangle.
4.Place each triangle onto an ungreased baking sheet and brush with melted butter. Bake for 25-30 minutes until golden brown. Serve warm or at room temperature.

PROS

Spanikopita is a great appetizer with crispy phyllo dough and savory spinach and cheese filling.
They can also be made ahead and frozen for future use.

Phyllo dough can be difficult to work with, it takes patience and some practice to get it right.
