Ingredients

1 cup flour
3 teaspoons baking powder
1 cup fine semolina ( or Farina )
1/2 cup unsalted butter
1 cup sugar
3 eggs , separated ( reserve whites )
1 teaspoon vanilla extract
1 lemon , zest of
1 cup milk
1 pinch salt
1 1/2 cups sugar
1 1/2 cups water
orange zest
1 teaspoon lemon juice
powdered sugar
ground cinnamon
1/2 cup almonds , blanched , lightly toasted , and chopped ( optional )
Greek Revani is a traditional semolina cake that originated in Greece and is popular throughout the Mediterranean. This light, sweet cake is a flavorful and refreshing dessert that is perfect for warm weather. Instructions

1.Preheat the oven to 180°C and grease a round cake pan with butter.
2.In a bowl, whisk together the flour and baking powder. Stir in the semolina.
3.In another mixing bowl, beat the butter and sugar together until creamy. Add the egg yolks and beat well. Mix in the vanilla and lemon zest.
4.Gradually stir in the flour mixture and milk alternately, beginning and ending with flour, and mixing until just combined.
5.In a separate bowl, beat the reserved egg whites until stiff peaks form. Fold them into the batter with a spatula until well combined.
6.Pour the batter into the greased cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
7.While the cake is baking, make the syrup by combining water, sugar, orange zest and lemon juice in a saucepan. Bring the mixture to a boil and simmer until the sugar dissolves. Set aside to cool.
8.Once the cake is done, remove it from the oven and let it cool in the pan for 5 minutes. Then invert the cake onto a platter or cake stand.
9.Pour the cooled syrup over the cake, allowing it to soak in.
10.Sprinkle the cake with powdered sugar and cinnamon, and top it with toasted chopped almonds (optional) before serving.
