600 g unsalted butter
250 g cashew nuts ( roughly chopped and baked )
1/2 teaspoon baking powder
220 g icing sugar
50 g dark rum or 50 g brandy
1000 g plain flour ( may need up to 1200gr depending on which you use ) or 1000 g unbleached bread flour ( may need up to 1200gr depending on which you use )

Instructions

1.Preheat the oven to 160C (320F).
2.In a large bowl, mix the butter, baking powder, and approximately 150g of the icing sugar until it becomes a creamy mixture.
3.Add the brandy or rum and mix well.
4.Gradually add in the flour, stirring well until the dough holds together, but does not stick to your hands.
5.Add the cashews and mix well.
6.Form the dough into small balls or crescents and place them on a baking tray lined with baking paper.
7.Bake for 20-25 minutes, or until pale golden on the bottom.
8.Let cool slightly, then dust with the remaining icing sugar on top.
