3 quinces
1 cup samos wine or 1 cup sweet dessert wine
2 cinnamon sticks
12 cups sugar

Instructions

1.Wash and peel the quinces, then cut them into thin slices.

3.Cook on medium-high heat until the sugar dissolves.
4.Lower the heat and use a sieve or a cheesecloth to skim any foam off the surface.
5.Cook for 2-3 hours, stirring occasionally, until the quinces are translucent.
6.Remove from heat and let it cool down.
7.Transfer to glass jars and refrigerate before serving.
