1 kg pumpkin
1 cup rice
1/2 cup olive oil

3 sage leaves , finely chopped

4 sprigs fennel , weed finely diced
1 cup almonds
12 figs , dried
1/4 cup currants
1 teaspoon orange zest

Instructions

1.In a bowl, mix flour and salt, then add olive oil and mix again.
2.Add vinegar, orange juice and water to the bowl and mix until combined. Knead the dough until it becomes a smooth ball. Cover with a cloth and let it rest for 30 minutes.
3.Peel and deseed pumpkin, then grate it and place in a large bowl. Rinse rice and add it to the pumpkin.
4.Add olive oil, sugar, salt, pepper, cinnamon, sage, fennel, almonds, currants, and orange zest to the bowl and mix well.
5.Preheat the oven to 180°C. On a floured surface, roll out the dough with a rolling pin, then cut into small circles.
6.Place a spoonful of the pumpkin mixture in the center of each circle, then fold up the edges.
7.Place the pastries on a baking tray and bake for 30-40 minutes, or until golden brown.
