1/4 cup semolina ( farina )
1/2 cup butter , cut into bits
2 teaspoons fresh lemon juice
1 lemon , zest of
1/2 teaspoon vanilla extract
8 -10 phyllo pastry , thawed , covered with dampened towel
1/2 cup butter , melted
icing sugar

Instructions

1.In a medium-sized bowl, whisk together the egg and egg yolk with the sugar until thick and creamy.
2.In a separate saucepan, heat the milk, semolina, and butter until just simmering.
3.Gradually pour the egg mixture into the milk mixture, whisking continuously until thickened.
4.Add in the lemon juice, lemon zest, and vanilla extract, stirring to combine.
5.Allow the mixture to cool to room temperature.
6.Preheat the oven to 375°F (190°C).
7.Brush melted butter onto the phyllo pastry, layering one sheet on top of the other until you have a stack about 8-10 sheets thick.
8.Spoon the cooled cream mixture onto the phyllo pastry, spreading it out evenly.
9.Roll the pastry into a spiral, tucking in the ends to create a circular shape.
10.Brush the top with more melted butter and sprinkle with cinnamon.
11.Bake for 30-35 minutes, or until golden brown.
