Ingredients

8 ounces unsalted butter
3 1/2 ounces slivered almonds
2 cups plain flour
1 teaspoon baking powder
3/4 cup icing sugar , sifted
1 egg yolk
1 teaspoon vanilla
1 tablespoon ouzo
4 tablespoons almond meal
1/2 cup icing sugar ( extra , for dusting )
Kourambiethes (also known as Kourabiedes) are a type of Greek almond shortbread that is typically enjoyed during Christmas and other festive occasions. These cookies are known for their crumbly texture and nutty flavor, thanks to the roasted almonds and almond meal. Kourambiethes are usually shaped like small crescents or balls and dusted with icing sugar. They can be found in most Greek bakeries and households, where they are often served with a strong cup of coffee or a glass of sweet dessert wine.

Instructions

1.Preheat the oven to 180°C/350°F.
2.Spread slivered almonds in a baking tray and roast in the preheated oven for 8-10 minutes until slightly browned. Let them cool to room temperature.
3.In a mixing bowl, cream butter with 3/4 cup of the icing sugar until light and fluffy. Add the egg yolk, vanilla, ouzo, and almond meal, and mix well.
4.Add the flour, baking powder, and roasted almonds. Mix until the dough starts to come together.
5.Divide the dough into small balls and shape each one into small crescents or balls. Place them on a baking tray lined with baking paper.
6.Bake in the preheated oven for about 20-25 minutes, or until slightly golden.
7.Remove from the oven and let them cool on the tray for 5 minutes before transferring to a wire rack. Let them cool completely before dusting with icing sugar.
