Ingredients

1/2 teaspoon baking soda
1 cup fresh orange juice , strained
1 1/2 cups olive oil
1 lemon , juice and zest of
1/2 teaspoon ground cinnamon
1/2 cup water , lukewarm
1/2 cup sesame seeds , toasted , ground
8 -9 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 tablespoons baking powder

Instructions

1.Preheat oven to 180°C.
2.Combine orange juice and baking soda in a large mixing bowl. Stir and let sit for 5 minutes.
3.Add the olive oil, lemon juice and zest, cinnamon, water, and sesame seeds. Mix well.
4.In a separate bowl, sift flour, sugar, and baking powder together.
5.Gradually add the flour mixture to the orange juice mixture, stirring until a smooth dough forms. Add extra flour if the dough is too sticky.
6.Knead the dough on a floured surface for a few minutes until it is smooth.
7.Divide the dough into 4 equal parts and roll each part into a log about 1.5 inches in diameter.
8.Place the logs on a baking sheet and bake for 35 minutes, or until lightly golden.
9.Remove from the oven and let cool for a few minutes.
10.Slice the logs diagonally into 1/2-inch slices and place back on the baking sheet.
11.Return to the oven and bake for an additional 8-10 minutes, or until the biscotti is golden brown and crispy.
