Ingredients

2 cups unsalted butter
1 cup caster sugar
3 egg yolks
2 tablespoons brandy
vanilla powder ( two packets ) or vanilla extract ( 2 tsp )
6 cups plain flour
1/2 cup blanched almond , chopped
500 g icing sugar ( for the coating at the end )
Greek Christmas-Easter Biscuits (or melomakarona) are a traditional sweet treat enjoyed all over Greece during the festive season. These biscuits are perfect for sharing with friends and family over a cup of coffee or tea. They are made from a buttery dough flavored with vanilla, brandy, and chopped almonds. They are then rolled in icing sugar to give them a sweet coating. These biscuits are soft, moist and have a wonderful spiced aroma from the cinnamon and clove in the vanilla powder.

Instructions

1.Preheat oven to 180°C (355°F) fan and line two large baking trays with baking paper.
2.In a large mixing bowl, cream the butter and sugar together until light and fluffy.
3.Beat in the egg yolks, brandy and vanilla until well combined.
4.Gradually add the flour, mixing in between additions, until the dough comes together.
5.Add in the chopped almond and mix through.
6.Roll the dough into small balls roughly the size of walnuts and place on the prepared trays.
7.Bake for 20-25 minutes or until lightly golden and cooked through.
8.While warm, gently roll the biscuits in the icing sugar to coat and then let them cool completely before serving.
