Instructions

1.Preheat your oven to 350°F (180°C).
2.Roast almonds at 350°F (180°C) for about 10 minutes, and chop them finely.
3.In a large bowl, beat butter for about 20 minutes until it turns white and creamy.
4.Gradually add powdered sugar and mix for another 10 minutes, until it's fully incorporated.
5.Add egg yolk, semolina, vanilla, brandy, and almond and mix until fully combined.
6.Gradually add flour and work the dough until it's soft and pliable.
7.Form small balls and place them on a baking sheet.
8.Bake for 15 minutes; take them out of the oven and let them cool.
9.Carefully dredge the cookies with powdered sugar.
10.Let them cool and store in an airtight container.
