Ingredients

12 ounces almond paste
1/2 cup white sugar
1 cup confectioners ' sugar
4 egg whites
1 1/2 cups pine nuts

Instructions

1.Preheat oven to 325°F (165°C).
2.Line baking sheet with parchment paper.
3.Break almond paste into small pieces and place in a large bowl.
4.Add the white sugar and confectioners' sugar to the bowl and beat on medium speed until crumbly.
5.Gradually add the egg whites while continuing to beat the mixture.
6.Spread the pine nuts on a plate.
7.Pinch off small pieces of dough and roll them into 1-inch balls.
8.Roll each ball in pine nuts, pressing nuts into the dough with your fingers.
9.Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
10.Bake for 15-18 minutes, or until lightly golden. Cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely.
