Ingredients

700 ml water
100 g demerara sugar
190 g gelling sugar
8 g vanilla sugar
10 g citric acid
dried rose petals
17 g fresh thyme
2 rock sugar ( optional )
Rose-Thyme-Syrup is a refreshing drink that has been enjoyed for centuries due to its medicinal properties. Instructions

1.Boil water in a pot and add fresh thyme and dried rose petals while stirring occasionally for 10 minutes.
2.Add demerara sugar, gelling sugar, vanilla sugar, and citric acid to the pot and stir until all the sugar is dissolved and the syrup starts boiling again.
3.Reduce the heat to a simmer and continue cooking, stirring occasionally for 20 - 25 minutes until the syrup becomes thick and sticky.
4.Strain the syrup through a fine mesh sieve and let it cool down to room temperature.
5.Pour into a sterilized glass bottle and store it in the refrigerator for up to 3 months.
6.To serve, mix the syrup with chilled sparkling water or soda in a 1:3 ratio in a glass filled with ice cubes. You can also add a stick of rock sugar and a slice of lemon for extra sweetness or sourness.
