Ingredients

400 g flour
150 ml milk ( luke warm )
4 eggs ( large )
1/2 teaspoon salt
300 g aromatic cheese , grated ( Alpine , Emmental , Swiss , Sharp Cheddar , Gruyere )
3 red onions ( cut in halves and then chopped in medium thin half rings )
1 tablespoon butter ( or 1 TB resolidified butter )
pepper
chives ( chopped )
Kaesespaetzle is a traditional German dish that is similar to macaroni and cheese. It features homemade spaetzle noodles that are smothered in aromatic cheese and caramelised onions. Instructions

1.In a large pot, bring salted water to a boil.
2.In a large mixing bowl, whisk flour, eggs and lukewarm milk until batter becomes smooth and silky.
3.Add salt to the batter and let it rest for 5 mins.
4.Add portions of batter through a spaetzle press into boiling water. They become noodles when they float. Fish them out when they float and keep them on a plate.
5.Melt butter in a frying pan. Add onions and caramelise them for 5-6 minutes on medium heat.
6.Mix in spaetzle noodles and grated aromatic cheese. Cook for 5 more mins.
7.Season with pepper to taste.
8.Serve hot, garnished with chives.
