Ingredients

4 large veal escalopes , pounded thin
1 lemon , juice of
1/4 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
4 tablespoons butter
1/4 cup dry white wine
8 ounces button mushrooms , wiped clean & sliced
2 tablespoons chopped fresh chives ( spring onions ) or 2 tablespoons scallions ( spring onions )
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg , grated
1/2 cup heavy cream

Instructions

1.Rub lemon juice on both sides of the veal escalopes and let them sit for 5 minutes.
2.In a shallow dish, combine flour, salt, pepper, and paprika. Dredge both sides of veal escalopes in the flour mixture.
3.In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the veal escalopes to the skillet and cook for 2-3 minutes per side or until golden brown. Remove the veal escalopes from the skillet and set them aside.
4.In the same skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add sliced mushrooms to the skillet and saute for 2-3 minutes or until tender. Pour white wine into the skillet and let it reduce by half.
5.Add chives, salt, pepper, and nutmeg to the skillet and let it cook for 1-2 minutes.
6.Reduce the heat to low and pour heavy cream into the skillet. Stir to combine all the ingredients in the skillet. Simmer for 2-3 minutes until the sauce is thickened.
7.Add the veal escalopes back to the skillet and spoon the sauce over them. Cook for 1-2 minutes or until the veal escalopes are heated through. Serve immediately.
