Ingredients

3/4 cup butter
3/4 cup caster sugar
3 eggs , beaten
1 1/2 cups self-rising flour
1 pinch salt
1/2 cup strong black coffee
2 -3 teaspoons sugar
1 tablespoon rum , overproof
300 ml whipped cream
1/2 teaspoon vanilla essence
2 -3 tablespoons slivered almonds , toasted
The Austrian Coffee Cake, or Wiener Turkentorte, is a classic Viennese dessert that has been enjoyed for centuries. This rich, moist cake is the perfect treat to enjoy with your morning cup of coffee or tea. It is typically made with layers of sponge cake and filled with apricot preserves or jam. Instructions

1.Preheat the oven to 350°F. Grease and flour a 9-inch cake pan.
2.In a large bowl, cream the butter and sugar together until light and fluffy.

4.Sift the self-rising flour and salt into the mixture a little at a time and fold them in using a spatula.
5.Once the mixture is smooth, fold in the strong black coffee and rum.

10.Spread the whipped cream over the bottom half of the cake, then place the other half on top.
11.Sprinkle the top of the cake with toasted slivered almonds and dust with powdered sugar, if desired.
