Ingredients

1 1/2 kg potatoes
1 large onion , peeled and finely diced
200 g smoked lardons or 200 g smoked streaky bacon , diced ( 8 ozs )
25 g butter
1/4 pint white wine
4 tablespoons creme fraiche or 4 tablespoons sour cream
1 garlic clove , peeled and cut in half
sea salt
fresh ground black pepper or fresh ground black pepper
fresh ground black pepper
1 ripe reblochon cheese

Instructions

1.Preheat the oven to 200C/fan oven 180C/gas mark 6.
2.Peel the potatoes, chop them into chunks and boil them in salted water until tender.
3.Meanwhile, fry the lardons or bacon in a dry frying pan until the fat runs.
4.Add the onion and cook until soft and translucent.
5.Drain the potatoes and add the lardons and onion to the pan.
6.Add the butter and white wine to the pan and cook over a high heat until the wine has reduced by half.
7.Stir in the creme fraiche or sour cream.
8.Rub the garlic clove halves over the inside of a large baking dish.
9.Season the potato mixture with salt and pepper.
10.Spoon the mixture into the baking dish.
11.Slice the reblochon cheese in half horizontally and place on top of the potato mixture, cut side up.
12.Bake in the oven for 25-30 minutes, or until the cheese is golden and bubbly.
