1 kg whole cooked prawns
250 ml sour cream
250 ml mayonnaise
2 tablespoons chopped dill , plus 8 fronds to garnish
2 tablespoons chopped chives
squeeze lemon juice
black pepper
25 -50 g butter
8 slices rye bread , halved
1 teaspoon red caviar ( or red lumpfish roe )

Instructions

1.Remove the heads and shells from the prawns, keeping aside four heads for decoration.
2.Chop the prawns and mix them with the sour cream, mayonnaise, chopped chives, chopped dill, lemon juice, and black pepper.
3.Heat a pan and melt the butter. Fry the bread for 1–2 minutes on each side until crispy.
4.Spread the prawn mixture on top of each slice of rye bread.
5.Top each toast with a little caviar, and garnish with a prawn head and fresh dill fronds.
