Zuppa di Pesce e Frutti di Mare, or Mediterranean Seafood Soup, is a specialty dish from the Italian coastal regions. This hearty soup is full of fresh seafood, vegetables, and herbs and is typically served as a main course for lunch or dinner. It is a popular dish for special occasions, such as Christmas Eve, and is often accompanied by a glass of dry white wine or sparkling water. The soup is traditionally served over toasted bread, which soaks up the flavorful broth and adds a satisfying crunch to every bite.

Instructions

.Rinse the cod and prawns in cold water, and set aside.
.Place the quartered onion, chopped carrot, and chopped celery in a large pot and add enough water to cover the ingredients.
.Season with salt and pepper to taste, and bring to a boil over medium-high heat, then reduce heat to low and simmer for 10 minutes.
.Heat the olive oil in a separate pan over medium heat. Add the sliced onion, chopped chile pepper, and minced garlic, and cook until the onion is translucent, stirring often to prevent burning.
.Add the white wine, chopped tomatoes, and clams to the pan and cook for 5 minutes, stirring occasionally.
.Add the mussels and cook for another 5 minutes, stirring occasionally.
.Add the cod and prawns to the pot of simmering vegetables and cook for 5 minutes, or until the seafood is cooked through.
.Toast the slices of bread and rub each slice with the halved garlic clove.
.Place the toasted bread in individual serving bowls and ladle the seafood soup over the bread.
.Garnish with chopped parsley and serve hot.
