Ingredients

1/8 teaspoon crushed saffron thread ( about 12 threads )
9 tablespoons unsalted butter , divided
1/2 cup minced fennel bulb , fronds reserved
1 large shallot , minced
24 ounces skinless boneless Norwegian salmon fillets
kosher salt & freshly ground black pepper , to taste
24 mussels
1 cup white wine
3 tablespoons dry white vermouth
1 tablespoon minced fresh chives
1 tablespoon minced fresh flat leaf parsley
1 tablespoon minced fresh tarragon leaves

Instructions

1.Preheat the oven to 375°F.
2.In a small bowl combine the saffron and 1 tablespoon of hot water, set aside.
3.In a small saucepan melt 2 tablespoons of butter and add fennel and shallot. Sauté for 5 minutes.
4.Add the wine and vermouth and reduce to half.
5.Add saffron with water, salt, black pepper, and 6 tablespoons of butter. Keep stirring and reduce heat to maintain a gentle simmer.
6.Take a baking dish and line with parchment paper. Add salmon fillets, mussels, and saffron sauce.
7.Place the dish in the oven and bake for 15-20 minutes.
8.Sprinkle freshly chopped chives, flat leaf parsley, fennel fronds, and tarragon leaves over the top of the baked salmon.
9.Serve hot with lemon wedges and crispy garlic bread slices.
