Ingredients

3 tablespoons butter
3 leeks , sliced
5 potatoes , medium
2 carrots , medium
1/4 cup flour
1 lt beef broth
2 egg yolks , slightly beaten
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons parsley , chopped
Purresuppe, or Leek Soup, is a traditional Danish soup that is hearty, comforting, and perfect for cooler weather. Made with leeks, potatoes, and carrots, this soup is a great way to use up leftover vegetables and is an easy meal to prepare. Instructions

1.Melt butter in a large soup pot over medium heat.
2.Add leeks to the pot and cook for 5 minutes or until soft.
3.Add chopped potatoes and carrots and cook for 2 more minutes.
4.Sprinkle flour over the vegetables and stir to combine.
5.Add beef broth to the pot and stir.
6.Bring to a boil, then reduce heat and simmer for 20-25 minutes or until vegetables are tender.
7.Remove pot from heat and allow to cool slightly.
8.In a small bowl, beat egg yolks until light in color.
9.Slowly pour a ladleful of hot soup into the yolks, whisking constantly to temper the eggs. Repeat with 2-3 more ladlefuls of hot soup.
10.Pour the egg mixture back into the pot of soup, whisking constantly to combine.
11.Add salt and pepper to taste.
12.Serve hot with chopped parsley on top.

It can easily be made vegetarian by substituting vegetable broth for the beef broth.
