Ingredients

6 egg yolks
1/2 teaspoon salt
1/3 cup light cream
1 tablespoon melted butter
1/3 cup granulated sugar
2 1/4 cups flour
1/2 teaspoon ground nutmeg
1 tablespoon grated lemon rind

Instructions

1.In a large mixing bowl, beat egg yolks and salt together until light and fluffy.
2.Add light cream, melted butter and granulated sugar. Mix until well combined.
3.Add flour, ground nutmeg and grated lemon rind. Mix until a dough forms.
4.Knead dough, cover with plastic wrap and refrigerate for at least 30 minutes.
5.Roll out dough to about 3mm thickness on a floured surface.
6.Cut the dough into diamond shapes.
7.Heat oil in a frying pan, and fry the shapes until they turn golden.
8.Remove from oil and place on a paper towel to absorb excess oil.
9.Sprinkle icing sugar on the cookies. Serve and enjoy.
