Ingredients

4 heads chicory lettuce , cut in half lengthways ( quarter bigger ones )
4 stalks celery , trimmed and cut into fingers
8 slices pancetta or 8 slices lean streaky bacon
200 ml chicken stock or 200 ml vegetable stock ( 7fl oz )
142 ml double cream
140 g frozen peas ( or petit pois , 5oz )
salt
pepper
Chicory and celeries are distinctly bitter vegetables that when done right, combine into a dish that is absolutely moreish. This dish delivers the tantalising aroma and flavour of pancetta while the sweetness of peas mitigates the bitter taste of chicory. This dish is perfect to satisfy your cravings for a creamy and savory meal without the sugars and added calories.

Instructions

1.Preheat the oven to 180°C (160°C fan) gas mark 4.
2.Wrap a slice of pancetta or bacon around each endive half. Arrange them in an ovenproof dish and add celery fingers.
3.Pour over the chicken or vegetable stock, season with salt and pepper.
4.Cover the dish with foil and bake in the oven for 30 min.
5.Remove the foil and increase the oven temperature to 220°C (200°C fan) gas mark 7. Cook for a further 10-15 min until golden.
6.Meanwhile, boil the peas in salted water for 2-3 min, until tender.
7.Drain and stir them into the cream, then season with salt and pepper.
8.Serve chicory halves and celery fingers with creamy peas on the side.

PROS

This dish is low in calories and fat, high in fiber as well as vitamins A and C.

It’s easy to prepare and makes a great vegetarian alternative to traditional meat-based meals.
