2 1/4 lbs of fresh live mussels
2 chopped garlic cloves
1 finely chopped onion
5 fluid ounces dry white wine
2 ounces butter
fresh herb
4 tablespoons cream or 4 tablespoons creme fraiche
salt and pepper

Instructions

1.Clean the mussels and discard any that do not close when tapped hard, or have broken shells.
2.Over a low heat, melt the butter and cook the onion until soft but not colored.

5.Add the herbs and mussels, cover and cook over a medium heat for 4-5 minutes, shaking the pan occasionally until the mussels are all open.
6.Discard any that have remained closed.
7.Remove from the heat and stir in the cream or creme fraiche.
8.Serve with crusty fresh bread and a glass of white wine.
