hard vegetable fat ( the kind is not as important as the fact it has to be hard . not oily )
2 lbs floury potatoes ( not hard boiling , but floury .. the kind here is also subordinate to the flouriness , if you have a g )
1 pinch salt

Instructions

1.Peel and cut the potatoes into long sticks of about 1 cm thickness.
2.Rinse the potato sticks in cold water to remove the starch.
3.Dry the potatoes thoroughly with a clean kitchen towel or paper towel.
4.Heat a large pot or deep-fryer with the hard vegetable fat over medium-high heat to 320°F (160°C).
5.Fry the potatoes in batches for about 5-7 minutes until soft but not brown.
6.Remove the potatoes from the oil and let them rest for at least 15 minutes.
7.Increase the heat of the oil to 375°F (190°C).
8.Re-fry the potatoes in batches until golden brown and crispy.
9.Remove the potatoes with a slotted spoon and drain them on kitchen paper.
10.Sprinkle with salt and serve hot with dipping sauce like mayonnaise, ketchup or go for traditional Belgian dipping sauce like sauce Andalouse or sauce Samurai.
