Ingredients

16 slices bread ( each about 5 inches square )
4 tablespoons olive oil
2 cloves garlic , halved
6 leeks , cut into 4 inch lengths , then sliced into thirds lengthwise , and separated into strips
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup cold water
1 1/2 lbs ripe brie cheese

Instructions

1.Preheat oven to 375°F (190°C).
2.Brush one side of each bread slice with 1 tablespoon olive oil. Arrange 8 bread slices, oil-side down, on a baking sheet.
3.Rub remaining 2 tablespoons olive oil over the bottom of a large skillet; place over medium heat. Add garlic; cook until garlic is golden brown. Remove garlic and discard.
4.Add leek slices, sugar, salt, and pepper to skillet; sauté until leeks are tender. Add water and cook 5 minutes or until water evaporates.
5.Spread brie over remaining 8 bread slices. Top each with leek mixture, then with a bread slice, oil-side up.
6.Bake 12 – 15 minutes or until lightly browned.
