4 heads Belgian endive
extra virgin olive oil , plus oil for frying
1 onion , chopped
salt & freshly ground black pepper
2 ounces morbier cheese , grated
1/2 lb ricotta cheese
5 eggs , divided
1 tablespoon chopped mixed herbs
3 tablespoons breadcrumbs
1/4 lb sandwich bread , chopped
3/4 cup cornmeal
3 tablespoons parmigiano , grated

Originally from Brussels, Belgium, endives or chicory heads are a versatile vegetable used in various dishes. The Belgian Endive Croquettes combine the slightly sweet and bitter taste of the endive with the creamy and savory filling made of cheese, breadcrumbs, and herbs. Instructions

1.First, wash the Belgian endives and cut off the larger ends, then slice the heads length-wise and remove the innermost core, leaving a cavity.
2.In a frying pan, heat the olive oil and sautee the onion until translucent. Set aside to cool.
3.In a bowl, mix together the ricotta cheese, morbier cheese, 2 eggs, chopped herbs, and cooled onion. Season with salt and black pepper.
4.Stuff the Belgian endive halves with the cheese filling, then seal the endives with flour.
5.In separate bowls, beat together the 3 remaining eggs, the cornmeal, and the breadcrumbs with grated parmigiano.
6.Dip each stuffed and floured endive into the egg, then dredge in the cornmeal mixture.
7.Fry the croquettes in hot oil until golden brown, then drain on paper towels. Serve hot and enjoy!
