Ingredients

1 kg fresh mussels
2 large spring onions
1 large shallot , finely chopped
2 fat garlic cloves , finely chopped
1 deseeded red chile , to taste
1 bunch fresh thyme
3 tablespoons flat leaf parsley
50 ml olive oil
200 ml dry white wine
1 teaspoon Pernod ( optional )
2 tablespoons creme fraiche
2 large potatoes , about 300g each , peeled ( preferably Maris Piper , King Edward or Weltje )
1 tablespoon herbes de provence
1 sprig fresh rosemary
oil , for roasting
Moule Frites is a beloved dish in France, where it is often enjoyed in brasseries and bistros with a glass of chilled white wine. Instructions

1.Rinse the mussels and remove their beards.
2.In a large pan or wok, heat the olive oil over medium heat and add the garlic, shallot, chile, and spring onions.
3.Cook for 2-3 minutes until the vegetables are softened, then add the white wine, Pernod (if using), thyme, and parsley.
4.Add the mussels to the pan and cover with a lid. Cook for 5-7 minutes, shaking the pan occasionally, until the mussels have opened.
5.While the mussels are cooking, preheat the oven to 200C/400F/gas 6. Cut the potatoes into thick chips and place them in a roasting tray with the herbs and oil. Roast for 30-40 minutes, turning occasionally, until the chips are golden brown and crispy.
6.Once the mussels have opened, remove the pan from the heat and stir in the creme fraiche.
7.Serve the mussels with the chips on the side.
