Ingredients

5 large yukon gold potatoes ( peeled )
3 tablespoons unsalted butter
3 large leeks , white and pale green parts , sliced in small ring
salt & freshly ground black pepper
3 tablespoons olive oil
1/4 teaspoon nutmeg , freshly grated
2 teaspoons fresh thyme ( or 1 Teaspoon Dried )
1 tablespoon all-purpose flour
1 tablespoon fresh flat leaf parsley , finely chopped
This hearty breakfast dish is perfect for starting your day off on the right foot. Instructions

1.Preheat oven to 190°C (375°F).
2.Thinly slice the peeled potatoes into rounds using a mandolin or sharp knife.
3.In a large pan, melt 2 tablespoons of butter over medium heat and add sliced leeks. Cook for about 5 minutes until softened and tender.
4.Add the sliced potatoes with some salt, black pepper, nutmeg, and thyme. Toss all of the ingredients together.
5.Cook for 5-7 minutes until the potatoes are cooked and softened.
6.In a separate bowl, mix 1 tablespoon of flour gently and evenly to the potatoes and leek mixture and stir well.
7.Melt 1 tablespoon of butter in a non-stick, oven-safe pan over medium heat.
8.Add the potato and leek mixture and press it firmly.
9.Cook the mixture for 5 minutes or until golden brown and crispy.
10.Place the pan in the preheated oven for 10-15 minutes.
11.Remove from oven and slice into desired portions.
12.Garnish with fresh parsley before serving!
