1 1/8 lbs green beans
3 large potatoes
4 ounces smoked streaky bacon , in one piece
1/2 ounce butter
1 tablespoon chopped parsley
1 tablespoon chopped spring onion
1 teaspoon red wine vinegar

Instructions

1.Trim the stalk ends from the green beans, then cook them in boiling salted water for about 3 minutes, until they are tender but still have a little bite. Drain and rinse under cold running water to stop the cooking.
2.Peel and dice the potatoes. Add them to a pan of boiling salted water and cook for 10-15 minutes or until softened. Drain well and set aside.
3.Cut the bacon into narrow strips. Heat the butter in a frying pan and fry the bacon until it is crisp.
4.Take the pan off the heat and stir in the vinegar. Return to the heat and bubble for a few seconds.
5.Add the green beans, potatoes and bacon to a large mixing bowl.
6.Sprinkle with parsley and spring onions. Toss all the ingredients together until they are well mixed. Transfer to a serving dish and serve at room temperature.
