Ingredients

1 cup cake flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon nutmeg , freshly grated
1 cup buttermilk
2 lemons , juice and zest of
3 large eggs , separated
1/2 teaspoon cream of tartar
1/4 cup water
1/2 cup light corn syrup
1 cup sugar
1 lb berries ( fresh or frozen-raspberry is my favorite )

Instructions

1.In a large bowl, whisk together cake flour, salt, baking powder, and nutmeg
2.In another bowl, combine buttermilk, lemon juice, lemon zest and egg yolks
3.Combine the wet and dry mixture by pouring the wet mixture into the large bowl with the dry mixture and mixing until just combined
4.In a separate bowl, beat egg whites and cream of tartar until stiff peaks form, and gently fold it into the batter
5.Heat up a Belgian waffle maker and grease it
6.Pour batter onto the machine and cook until golden brown.
7.In a small saucepan, combine water, corn syrup, sugar, and berries. Boil and cook until sugar dissolves and the mixture is syrupy
8.Place the waffles on the plates and spoon the berry syrup generously on top
9.Serve and enjoy!
