2 cups flour

2 eggs
1 cup buttermilk
1/2 cup butter , melted
Swedish Christmas Muffins are a traditional Christmas treat in Sweden, and are often served on Christmas morning or as part of a festive brunch. Instructions

1.Preheat your oven to 200C/180C fan/gas 6 and line a muffin tin with muffin cases.
2.In a large bowl, mix together the flour, wheat germ, baking powder, baking soda, cardamom and salt.
3.Stir in the sugar, almonds, raisins and mixed glace fruit.
4.In another bowl, whisk together the eggs, buttermilk and melted butter.
5.Add the egg mixture to the flour mixture and stir until just combined.
6.Pour the batter into the muffin cases and bake for 20-25 minutes, until golden brown.
7.Remove from the oven and let them cool in the tin for 5 minutes, before transferring them to a wire rack to cool completely.
