Slottsstek, or Swedish Royal Pot Roast, is a traditional Swedish dish that is often served during holidays or special occasions. The dish is usually served with potatoes, lingonberry jam, and a side of pickled vegetables. It is a hearty and satisfying meal that is perfect for a cozy dinner at home with family and friends.

Instructions

.Preheat oven to 325°F. Salt and pepper the beef and rub with allspice.
.Heat a dutch oven on medium-high heat and melt the butter, then add in the beef to sear it on all sides.
.Once the beef is browned, remove it from the pan and add in brandy to deglaze the pan, scraping up the brown bits.
.Add in the beef broth, onions, bay leaves, vinegar, and molasses to the pan, stirring to combine everything.
.Place the beef back in the pan and bring the mixture to a boil. Then, cover the pan and place it in the oven for about 2 hours, or until the beef is tender.
.Once the beef is cooked, remove it from the pan and let it rest for 5-10 minutes.
.While the beef is resting, remove the bay leaves from the pan and use a blender to blend the remaining mixture into a smooth gravy.
.Slice the beef into thin slices, place on a platter, and top with the gravy. Garnish with chopped parsley.
