Ingredients

2 lbs norwegian salmon fillets ( of optimum quality )
1/4 cup salt ( preferably sea salt )
1/3 cup sugar
1/2 teaspoon white peppercorns , slightly crushed in a mortar
1 bunch fresh dill , the stems
3 tablespoons Swedish mustard or 3 tablespoons german sweet mustard
1 teaspoon Dijon mustard
1 teaspoon sugar
1 teaspoon vinegar
salt , pepper
6 tablespoons mild vegetable oil ( not olive oil ! )
additional fresh dill , finely chopped
Gravlax marinated salmon, also known as gravlax salmon or gravad laks, is a popular dish in Scandinavian cuisine. It involves marinating fresh salmon in salt, sugar, and dill for several days to create a unique and flavorful dish. Gravlax salmon is often served as an appetizer or as the main course with a side salad. It's popular in many parts of the world, especially in the US and Canada, where it's commonly found on brunch menus and in seafood restaurants.

Instructions

1.Rinse the salmon fillets and pat them dry with paper towels.
2.Mix the salt, sugar, and white peppercorns in a bowl and rub the mixture all over the salmon, making sure to cover evenly.
3.Place nearly all of the bunch of fresh dill on a large piece of cling film, then place the salmon fillets skin-side down on top of the dill.
4.Make a smooth mustard sauce by mixing the Swedish mustard or German sweet mustard, Dijon mustard, sugar, vinegar, salt, and pepper in a bowl. Spread the sauce evenly on top of the salmon.
5.Finely chop the remaining fresh dill and sprinkle over the salmon.
6.Fold the cling film tightly around the salmon, then place it on a tray.
7.Apply weight on top of the salmon, such as another tray, and place it in a refrigerator. Allow the salmon to marinate for 2-3 days.
8.After marination, remove the salmon from its cling film and rinse under cold running water. Pat the salmon dry and remove any bones with fish tweezers. Cut the salmon into thin slices and serve.
