Ingredients

1 pork knuckle , with bone ( salted if available )
bouquet garni ( a little thyme , laurel and parsley )
1/2 teaspoon white peppercorns
1 -2 tablespoon salt ( if using unsalted meat )
1 lb swedes
1 lb potato
1 small carrot
salt

2 tablespoons butter
strong mustard ( e.g . Dijon or Colman )
Knuckle of pork with mashed swedes, or Flasklagg med rotmos in Swedish, is a classic Scandinavian comfort food that's perfect for chilly days. Instructions

1.Rinse the pork knuckle and place it in a pot with enough water to cover it. Bring the water to a boil, then reduce heat and add the bouquet garni and white peppercorns.
2.Cover the pot and simmer for 2-3 hours or until the meat is falling off the bone.
3.While the meat is cooking, peel and chop the swedes, potato, and carrot. Boil in salted water until tender.
4.Drain the vegetables and mash them together with butter, salt, and pepper to taste.
5.Serve the pork knuckle with the mashed swedes and a dollop of strong mustard on the side.
