Ingredients

2 1/2 cups milk ( I use 2 % milk )
3 eggs
2 egg yolks ( freeze the 2 egg whites for frosting or angel food cake )
1/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract ( do NOT go overboard with the almond , a little goes a long way ! )
1 pinch salt
1 pinch nutmeg ( to be only shaken on top of the custard )

Instructions

1.Preheat oven to 325°F and butter a 1 1/2-quart baking dish.
2.In a medium saucepan, heat the milk over low heat until hot but not boiling.
3.In a separate bowl, beat the eggs, egg yolks, sugar, vanilla extract, almond extract, and salt until well combined.
4.Gradually pour the hot milk into the egg mixture, whisking constantly.
5.Pour the custard mixture into the prepared baking dish and sprinkle with nutmeg.
6.Place the baking dish in a large roasting pan and add very hot water to the roasting pan until it reaches halfway up the sides of the baking dish.
7.Bake for 40-50 minutes, until the custard is set but still jiggles slightly in the center.
8.Remove the baking dish from the roasting pan and let cool before serving.
