Instructions

1.In a small pot on low heat, melt butter, sugar, and dark corn syrup, stirring occasionally; then remove from heat and let cool.
2.In a large mixing bowl, whisk together the flour, ground ginger, cinnamon, ground cloves, and baking soda until combined.
3.Add the melted butter mixture to the dry ingredients, along with the egg, and mix until fully combined and the dough is smooth.
4.Cover the bowl with plastic wrap and refrigerate for at least an hour but preferably for at least 8 hours.
5.When ready to bake, preheat the oven to 350°F (175°C), and line a baking sheet with parchment paper.
6.Roll the dough into small balls roughly 1 inch in diameter and place on the prepared baking sheet.
7.Bake for 10-12 minutes, until the edges are golden brown.
8.Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
9.Store the cooled cookies in an airtight container for up to a week.
