1 cup butter , softened
1/2 cup white sugar
2 cups sifted all-purpose flour
1/2 cup any flavor fruit jam or 1/2 cup preserves
Rosenmunnar is a traditional Swedish pastry that is enjoyed during fika (coffee break). This pastry is a cross between a biscuit and shortbread, it is soft and crumbly with a sweet jam filling. Instructions

1.Preheat the oven to 180°C.
2.In a bowl, cream the butter and sugar until pale and fluffy with an electric mixer.
3.Fold in the sifted flour and mix it together until crumbly.
4.Press two-thirds of the mixture into the bottom of a greased baking dish while reserving the remaining mixture to sprinkle on top.
5.Spread the jam evenly over the crust.
6.Finally, crumble the remaining reserved dough on top of the jam and press down the edges.
7.Bake for 20-25 minutes, or until golden brown.
