Ingredients

1 tablespoon grated onion
2 tablespoons butter
2 cups cold mashed potatoes
1 cup cottage cheese ( or more )

2 1/2 cups flour
1/2 teaspoon salt
1 egg

3/4 cup warm water

Instructions

1.Saute grated onion in butter. Cool slightly.

5.Roll out dough 1/16 inch thick on a floured board and cut into 3-inch rounds.

7.Drop pierogies into boiling salted water and cook uncovered until they rise to the surface, about 3-5 minutes. Boil an additional 2-3 minutes. Drain.
8.Serve hot with butter or fried onions.
