Ingredients

1/4 cup milk , WARMED
1 tablespoon sugar
1 tablespoon instant yeast
4 cups flour
1/2 cup vegetable oil
1 teaspoon salt
3/4 cup mineral water
1/2 bunch parsley
1 1/2 cups feta cheese
1 egg yolk , beaten
2 tablespoons poppy seeds

Instructions

1.In a small bowl, combine the warm milk, sugar, and yeast. Stir to dissolve the yeast and let sit for 5 minutes.
2.In a large bowl, sift the flour and add the vegetable oil and salt. Mix well.
3.Add the yeast mixture to the flour mixture and mix well. Gradually add in mineral water, a little at a time, until the dough comes together.
4.Knead the dough for 10 minutes until smooth and elastic. Cover with cling wrap and leave to rest for 30 minutes.
5.Preheat the oven to 350°F/180°C. Grease a baking tray with oil.
6.In a separate bowl, mix together the feta cheese and finely chopped parsley.
7.Pinch a piece of dough from the main batch and shape it into a small bun.
8.Using your fingers, flatten out the bun and add a small spoon of the cheese mixture into the center.
9.Seal the bun tightly with your fingers. Repeat this process for the remaining dough and cheese mixture.
10.Place each bun onto the greased baking tray and brush the tops with egg yolk allowing to soak into the dough and sprinkle with poppy seeds.
11.Bake in the preheated oven for 25 minutes until lightly golden.
