Ingredients

1/2 cup milk , warm
4 1/2 teaspoons active dry yeast
6 - 6 1/2 cups all-purpose flour , plus extra for rolling
3/4 teaspoon salt
6 tablespoons sugar
1 cup sour cream , room temperature
3/4 cup butter , very soft
3 eggs , beaten , room temperature
1/4 cup butter , for basting before and after baking
1 1/2 cups golden raisins , soaked in warm water 2 to 3 hours
2 cups pecans , finely chopped or 2 cups walnuts , may be used
1/2 cup sugar
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 egg white , beaten to soft peaks

Instructions

1.In a small bowl, dissolve the yeast in warm milk and set aside for 5 minutes.
2.In a large mixing bowl, mix together flour, salt, and sugar.

4.Add the milk and yeast mixture, and continue mixing until you have a smooth and elastic dough.
5.Knead the dough for about 5-7 minutes, then let it rest for 10 minutes.
6.While the dough is resting, prepare the filling. In a separate bowl, mix together the soaked and drained raisins, finely chopped pecans or walnuts, sugar, vanilla extract, and almond extract.
7.Preheat the oven to 350°F (180°C).
8.Roll out the dough on a floured surface into a large rectangle.
9.Spread the prepared filling evenly over the dough, leaving a 1-inch border around the edges.
10.Roll up the dough tightly, tucking in the edges as you go, and place seam side down on a greased baking sheet.
11.Baste the dough with 1/4 cup of very soft butter.
12.Bake for about 30-35 minutes or until golden brown.
13.Baste the dough again with butter immediately after removing it from the oven, and let it cool before slicing and serving.
