Layered Pancake Gateau (Hungary) is a popular and traditional Hungarian dessert that is often served during special occasions. This dish is similar to a pancake cake that is alternately layered with almond cream and sour cream. The addition of lemon juice and lemon peel provides an extra flavor that elevates this dish. Instructions

1.To make the pancake batter, in a medium bowl beat egg yolks and sugar together until light and fluffy.
2.Add milk and flour, mix until well combined then stir in melted butter.
3.In a separate bowl, beat egg whites until stiff, then gently fold into the pancake batter.
4.Heat a nonstick pan over medium heat. Use a ladle to pour pancake batter onto the pan and cook, flipping once until both sides turn light golden-brown. Repeat until all batter has been cooked, setting each pancake aside to cool.
5.In another bowl beat egg whites until stiff then add powdered sugar and vanilla sugar and whisk until well combined. Add in ground almonds and grated lemon peel and stir until the mixture becomes a thick cream.
6.Spread 1 tablespoon of sour cream on each pancake then spread the almond cream mixture on top of the sour cream.
7.Stack the pancakes on top of each other to form a tower, covering each layer with almond cream.
8.Dust the tower with powdered sugar before serving.
