8 eggs , at room temperature separated
1/2 cup sugar
1/2 cup sifted cake flour
1 tablespoon lemon juice ( I like the vanilla ) or 1 tablespoon good vanilla extract ( I like the vanilla )
1 teaspoon baking powder
1/4 teaspoon salt

Instructions

1.Preheat your oven to 325°F (160°C), grease and flour a 10 inch (25 cm) cake pan with high sides.

7.Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
8.Let the cake cool before removing from the pan. Once it has cooled down, slice and serve it with your favorite topping.
