Ingredients

4 garlic cloves
1 teaspoon kosher salt ( plus more for seasoning )
3 tablespoons unsalted butter
1 tablespoon sweet Hungarian paprika
1 teaspoon finely ground dried porcini mushrooms ( optional )
1/2 teaspoon caraway seed , cracked
fresh ground black pepper
1 chicken , trimmed of excess fat and giblets removed
1 large shallot , sliced ( or 1/2 medium red onion )
1/2 lemon , zest of , peeled in large strips
1 -2 tablespoon horseradish , drained ( I use prepared horseradish )
1/4 cup sour cream
This mouth-watering dish is a classic Hungarian recipe with a twist. Instructions

1.Preheat oven to 450°F (232°C).
2.Combine garlic and 1 teaspoon of kosher salt in a mortar and pestle or with a knife and scrape into a small bowl.
3.Melt butter in a small saucepan over medium heat.
4.Whisk in the garlic paste, paprika, porcini mushrooms (if using), and caraway seeds.
5.Season with black pepper.
6.Rub the garlic butter mixture all over the chicken and under the skin.
7.Season chicken with more kosher salt, if desired, and put shallots and lemon zest in the cavity.
8.Roast chicken in the oven for about 45-50 minutes.
9.For the horseradish cream sauce, mix horseradish and sour cream together in a small bowl.
10.Serve hot with horseradish cream sauce.
