8 medium cucumbers or 15 kirby cucumbers , peeled
1/4 cup finely chopped fresh dill
1/4 cup kosher salt
1/2 pint sour cream
2 tablespoons white vinegar
2 garlic cloves , minced
1 teaspoon Hungarian paprika

Instructions

1.Peel and slice cucumbers thinly.
2.In a large bowl, combine the sliced cucumbers, kosher salt, and chopped dill. Mix well and set aside for at least 30 minutes to allow the cucumbers to sweat.
3.Squeeze out the excess liquid from the cucumbers and transfer to a new bowl.
4.In a separate bowl, mix together the sour cream, white vinegar, minced garlic, and Hungarian paprika.
5.Add the sour cream mixture to the cucumbers and mix until well combined. Refrigerate for at least an hour before serving.
