Ingredients

500 g pork liver
1 kg pork butt
250 g bacon
125 g breadcrumbs
2 onions
2 teaspoons sage , fresh
1 teaspoon thyme , fresh
1 tablespoon parsley , fresh
1/2 teaspoon nutmeg
salt and pepper
500 g caul
500 ml stock , pork or 500 ml chicken
1 tablespoon oil
2 tablespoons flour
Ffagodau is a traditional Welsh food that is also eaten in other parts of the UK. This dish is made from pork liver as its base, which is mixed with minced pork and bacon, seasoned with herbs and spices, then rolled within a caul. The caul acts a casing that resembles a sausage, Ffagodau is made from lean meat and carved into its cross section. It is served with gravy and potatoes. It may look heavy but is actually moreish and delicious. It is usually found at butchers or delicatessens across Wales, and is a staple at large family gatherings and celebrations.

Instructions

1.Preheat your oven to 180C.
2.Mince the liver, pork and bacon together or use a food processor.
3.Mix the minced meat with breadcrumbs, chopped onions, herbs, nutmeg, salt and pepper.
4.Place caul on the wooden board and stretch it out to double the size.
5.Spread the meat mixture over the caul leaving about 3 cm from the edges.
6.Roll up the mixture within the caul, tucking in the ends and making sure the stuffing is tight.
7.Place the roll into a greased roasting tin.
8.Pour over the stock, cover and cook for an hour.
9.Remove the cover and cook for a further 30-40 minutes.
10.Remove from the oven and let stand for 10 mins before serving, Remove the strings and slice it.
