Ingredients

275 g day old white bread , crusts removed and cut into chunks
1 onion , peeled and cut into chunks
1 tablespoon chopped fresh flat leaf parsley
1 teaspoon thyme leaves
225 g caerphilly cheese or 225 g lancashire cheese , grated ( caerphilly is a mild but tangy cow 's milk cheese )
1 teaspoon Dijon mustard
2 eggs ( divided )
8 tablespoons flour , to coat
3 -4 tablespoons olive oil
1 tablespoon olive oil
1 onion , sliced
2 tablespoons sun-dried tomato puree
500 ml vegetable stock
Glamorgan Sausages, also known as Welsh Veggie Sausages, are an excellent vegetarian alternative to traditional sausages. Instead of meat, this recipe calls for bread, grated cheese, onion, and traditional herbs such as thyme and parsley. The sausages have a soft texture and tend to be less dense than traditional sausages. Topped with a sun-dried tomato puree and caramelised onion gravy; these sausages will satisfy your appetite and your taste buds. Enjoy these sausages on their own or turn them into a well-rounded meal with a side of salad or baked vegetables.

Instructions

1.In a large bowl, soak bread chunks in ½ cup of vegetable stock. Leave for 10 minutes.
2.In a food processor, add onion and pulse to chop.
3.Add parsley, thyme, and grated cheese to the processor, blend until combined.
4.Put the mixture into the soaked bread, add mustard and one egg.
5.Use your hands to combine all the ingredients in the bowl.
6.Make the mixture into sausages shape.
7.Coat sausages with flour.
8.Heat oil in frying pan over medium heat, and fry the sausages until brown on both sides.
9.In a separate pan, fry the onions until caramelised, add the sun-dried tomato puree and remaining stock to make onion gravy sauce.
10.Place sausages in the gravy for a few minutes and serve hot.
