6 tablespoons dried currants ( divided )
1/2 cup sugar

Instructions

1.In a bowl, whisk together the flour, salt, eggs, and milk until well combined.
2.Heat a non-stick skillet or crepe pan over medium heat, lightly greased with vegetable oil or shortening.
3.Add 3 tablespoons of crepe batter and tilt the pan to spread the batter into a thin, even round. Cook for about 1 minute or until the edges begin to curl.
4.Flip the crepe and cook for an additional 30 seconds or until lightly golden. Repeat with the rest of the batter.
5.In a saucepan, combine 4 tablespoons of currants, sugar, and lemon juice, and bring the mixture to a boil. Cook for 5-7 minutes or until thickened.
6.Spoon the currant sauce onto the crepes and serve warm.
